Fast & easy Plantspired tofu veggie burritos

I love a good food prep session however, I always keep some prepared tofu in the fridge for quick lunch or dinner ideas when we need it. Add it quickly to Buddha bowls, toss in a pasta salad or a big salad or like this recipe, add it to a burrito for a filling and easy lunch idea. Enter Nasoya Plantspired Toss’ables. Ingredients:
1 large burrito wrap (use your preferred product)
1 small avocado, pitted and mashed
2 tbl of hummus (I used a jalapeΓ±o cilantro)
1 small cucumber, chopped
Palmful of shredded carrots
1 green onion, diced
1/3 cup of Nasoya Toss’ables in Garlic and herbs tofu cubes
1 tbl pickled jalapeno
1/2 of a bell pepper, sliced thinly
Fresh cilantro leaves

Method:

Lay your burrito out flat on a cutting board. Smear the avocado and hummus in a thin layer across the entire surface. Add the cucumber slices, Plantspired TofuBaked cubes , carrots, jalapeΓ±o, bell pepper slices and cilantro. Carefully grab one side of the burrito and start rolling, simultaenously tucking in the ingredients. Slice in pinwheels or in half. Serve with your favorite tortilla chips and salsa.
