I love Indian food.  I love all kinds of food but Indian food… it’s so incredible especially when you’re vegan.  The flavor-packed options are endless.  I always gravitate towards cauliflower dishes.  Their spices are so healthy for the body.  Reducing inflammation.  Provides iron.  Helps transfer oxygen to vital organs.  Benefits metabolism and helps immunity.  Can’t go wrong.  Food is medicine!  Trust me.

This is one of those veggies that you can prep ahead of time and have for the week.  Great paired up with rice, salad greens, quinoa or a side dish for your favorite protein.

Ingredients:

One head of organic cauliflower, cut into florets
3 tablespoons of olive oil
1 tablespoon of curry powder
1 tablespoon ground turmeric
1 teaspoon of Garam Masala
Pinch of salt
Freshly cracked pepper

Directions:

Preheat your oven to 425 degrees.  Spray your cookie or baking sheet with coconut or olive oil.  Set that aside.   In a large bowl add your olive oil and spices.  Whisk to combine.  Then slice your cauliflower into florets.  Then add to the bowl and toss to coat.  Add additional olive oil if needed.  Then add your cauliflower to the baking sheet and bake for 15 minutes and flip.  Then roast another 10 or so minutes or until golden around the edges.

fitness_update

This week is a bit of a breather in training despite still racking up the miles -just not as many as the week prior.  The breather in training helps to heal muscles and repair.  Mentally it also helps bounce back from the beat down you go through while training.  Running is so mental, especially when you train alone – you need to find mental strength especially when you’re tired.  I’m blessed with great running resources and cheerleaders that provide me with so much.

Sunday:  Rest day.
Monday: 5 treadmill miles/weights/core/balance
Tuesday: 3.5 treadmill/abs
Wednesday: 5 mile treadmill/weights/core/balancing work

My long run dips this week before my next, even longer run, next weekend.  Due to the weather getting quite frigid this weekend – I’m planning on doing it tomorrow while the temps are still holding in the 30’s.  Then just do the remaining lower mileage run this weekend indoors at the gym.
