The Ultimate Crunchy Veggie Sandwich
I’ve been so obsessed with this Carbonaut bread. No lie its so good, soft, flavorful and low in carbs… sounds too good to be true but it isn’t! This was my first way I used it and it’s been on repeat! I’m going to share a basic how-to on how I create this type of sandwich but use your favorites or what you have on hand for sure. Pairing veggies up with this bread, protein heavy, it serves as a great, satisfying lunch idea.
Ingredients:
2 slices of bread, toasted or not.
Hummus of choice
Vegan cheese slices (I used smoked cheddar from Violife)
Cucumber slices, lengthwise
Fresh bell pepper slices or jarred roasted red peppers
Broccoli sprouts
Seasonings (I used everything but the bagel)
Hot sauce
Optional additions:
Guacamole
Sliced avocado
Pickled jalapenos
Pickled onions
Red onion slices
Sauerkraut
Method:
Take 2 slices of your bread.
Smear both slices with a thin layer of hummus.
Add your cheese slices.
Cucumber slices
Pepper slices
Sprouts
Seasonings.
