Cinnamon and Spice Apple Chips.

After a wonderful fall weekend, we finally got to the apple orchard and managed to pick 40 lbs of various apples.  Sunday was then spent cooking, baking and drying apples.  This week I’m going to be posting all apple recipes, hope you love apples as much as I do!  Today I’m starting with a super easy, healthy, vegan apple chip.  Kids love them!  Adults can’t stop eating them.  Perfect for after-school snacking, treats to pack in lunches or a healthy afternoon snack for you.  This is a totally fix it and forget it recipe.  Fall perfection!

Ingredients:

4 firm apples sliced thinly with skin remaining (if you have a mandoline slicer – use that)
Silpat or baking sheet liner
Cookie sheet
Cinnamon and sugar

Directions:

Preheat your oven to 215 degrees.  Line your cookie sheet.  Then wash and slice your apples thin.  Place on the cookie sheet in one layer – avoid overlapping.  Sprinkle with cinnamon and sugar.  Bake for 3 hours.  Midway through, I turn rotate the cookie sheets (I normally have several in the oven at once).  Remove and serve.  They will be super crispy and perfect.

    Hey Robin! Lovely photos!

    I just sliced up Jazz apples with my mandolin slicer, and try sort of fell apart. What variety did you use? I didn’t slice them super duper thin. It was number 2 setting on my slicer.

      Hey Mo! Just try them a bit thicker then but not too thick – think of a potato chip. I used an OXO mandoline slicer (just above the thinnest setting). oxo

    Great idea and such a simple recipe. Thanks for sharing. Going to Oak Glen apple country in November, I’ll be trying your recipes when I bring home a load myself.
