Easy and delicious cheesy tofu.


This recipe came upon me as a whim and it stuck!  We’ve been eating this in grain bowls, on sandwiches and straight out of the bowl for months now and I thought I better share.  Super easy and a very good idea for meal prepping for the week.  Without further adieu…

Ingredients:

2 blocks of super or extra firm tofu, drained and cubed into bite sized pieces or in larger thinner slices for sandwiches
1/3 cup of nutritional yeast flakes
1/4 cup of liquid aminos
3 tbl of a good Dijon mustard
2 tbl of chili paste or hot sauce
2 tbl of smoked paprika

Method:
Preheat your oven to 375 degrees.  Spray your baking sheet with oil or line with parchment paper and set aside.

Into a large mixing bowl add your nutritional yeast through paprika.  Whisk to combine.  If it’s too thick add a tablespoon of water to thin it out.  The marinade should be loose but not watery.  Then add your tofu and toss gently. Let it marinade for 30-60 minutes and then add to your baking sheet in a single layer.  Bake for 25 minutes and flip.  Bake for an additional 15 minutes or so until golden or how you like your tofu.

We love to add to salads or our Buddha bowls for a protein source.
