Pumpkin Pie Roasted Almonds.

If you follow my blog, you know I’m a pumpkin addict.  I start cooking with it the minute the kids go back to school and fall creeps into my psyche.  I love the warmth of the aroma and the taste is out of this world!  Funny enough, I don’t like pumpkin pie.  I can’t explain it but I whip up so many other great substitutions that I’m cool with it.

Super easy recipe…

Ingredients:

2 cups of raw almonds
3 teaspoons of ground cinnamon
2 1/2 teaspoons of pumpkin pie spice seasoning
4 tablespoons of organic agave or honey
1 teaspoon of vanilla extract
Sea Salt

Directions:

Preheat the oven to 325 degrees.  Line a cookie sheet with parchment or foil.

Into a bowl place your almonds.  Then add cinnamon, spice, agave or honey and vanilla.  Toss to coat each nut.  Spread the nuts evenly on the cookie sheet.  Sprinkle with sea salt.  Bake for 18-20 minutes.  Let cool and serve.

  7. These are delicious! And smell fantastic, my only problem was getting them off the foil when they were cool. I lost half of them cause they were covered in foil fragments… :( any tips?

    • Hmmmm…. I didn’t have that problem. Maybe try spraying your foil with a baking spray (olive oil Pam etc.) to see if that helps. If not, bake on a Silpat instead of foil. Hope this helps! Robin

  8. As a trainer I am always trying to give my clients healthy yummy snacks, and this was perfect! Honey is a little high sugar for some, so I repalced it with organic Agave, they are absolutely delcious!! I made a big batch for me and my clients! :)

  12. I just made these last night and they are delicious and made the house smell heavenly.

    Because of the Agave they stuck together pretty good in the bowl. Does anyone have any good tips so they don’t come out in large clumps if I am serving it to company? Although, they are so goo I wouldn’t mind a large clump. ;)
