Simple rainbow Swiss Chard recipe. Vegan. Gluten free.

Serves: 4-6
  • 1-2 bunches of fresh rainbow Swiss Chard
  • 3 cloves of garlic, minced
  • 2 tbl of olive oil
  • Salt
  • Pepper
  • Juice of 1 lemon
  1. Wash your Swiss Chard in cold water and lay out on a clean kitchen towel to dry.
  2. Remove the stalks from the leaves.
  3. Chop the stalks into 2 inch pieces.
  4. Into a large pot, add your olive oil and allow to heat over medium heat.
  5. Once hot, add your garlic, stirring often.
  6. Add your stalks after 30 seconds of cooking the garlic, stir to combine.
  7. Cook for 3-4 minutes.
  8. Then proceed to chop the leaves of the chard.
  9. Add the chard leaves to the cooked stalks.
  10. Cook until the leaves are wilted nicely.
  11. Add salt and pepper to taste.
  12. Taste and adjust seasoning.
  13. Finish off with fresh lemon juice.
  14. Serve.
  15. Optional topping: chili flakes
