Unsweetened cinnamon applesauce.

Apple week continues!  I couldn’t have a week of apple recipes without a good applesauce recipe, let’s face it.  This recipe is so super easy and makes as much or as little as you want.  I like to make a lot because I use a lot of applesauce in my baking in lieu of adding fat.  You can easily control the consistency (if you like smooth or chunkier) and the amount of cinnamon you prefer.  This is another fix it and forget it recipe that doesn’t require babysitting.
Ingredients:

6-8 apples (used firm Cameo apple but Fugi or any other firm apple will do), peeled, cored and diced
1/4 cup of water
1 teaspoon or more of ground cinnamon

Directions:

Place all of your ingredients into your saucepan and bring to a boil (what little water there is in the pan) and then reduce to low and cover.  Let this cook for 30-40 minutes over a very low flame. The apples will release their water content adding more cooking liquids.  When you easily break the apples down with a fork, remove from heat.  With a hand immersion blender or your Vitamix, add the contents and blend until you have the consistency you prefer.

Store in airtight containers in the refrigerator for up to 2-3 weeks.
