Massaged Kale Salad by Knead to Cook.

All hail the massaged kale salad.  Kale has become increasing popular and trendy but this is one trend that nutritionally needs to stay around.  The nutritional benefits to kale are astounding. Kale is low in calorie, high in fiber and has zero fat. Kale is high in iron. Kale is high in Vitamin K. Kale is filled with powerful antioxidants.  Kale is a great anti-inflammatory food. Kale is great for cardiovascular support.  Now I realize, despite all of those fabulous details, some people don’t particularly care for the harsher flavor of this green giant.  Trust me, lover of kale or not, this recipe will make you love it more or enlighten you on the fabulousness of this green powerhouse.

Ingredients:

2 cups of fresh kale, washed and dried (organic is preferred)
Juice from 1/2 of lemon, seeds removed
1 teaspoon of olive oil
Sea salt
Fresh ground pepper

Salad mix-ins:
Radishes
Avocado
Peppers
Nuts
Seeds
Beets
Carrots
Celery
Or whatever your mind comes up with!

Directions:

In a large bowl, add your kale, lemon juice, olive oil and sea salt.  With freshly washed hands, start massaging the leaves gently.  This will slightly wilt the greens and transform the flavor to a mild, lovely salad greens.  Massage for approximately 3 minutes.  Then add your pepper and additional ingredients.  Give a good toss and serve.  Enjoy!

On the fitness front, I feel like last week was just exhausting.  I ran 27:42 miles in 3:41:03 plus walked about 8-9 miles per day.  I also did weightlifting 3 days last week.

I opted to take a rest day, scratch that, weekend because I just needed it.  Saturday we took a road trip to Newark, NJ to take our girls and friends to see Katy Perry – which was an awesome concert!  If you want to see some video from the concert and more pics, check out my Instagram.

After having such a fun weekend I was ready to hit the ground running today.  I did 8:46 miles this morning  at 8:07 minute mile.  It felt good to get my legs moving.  Wishing you all a great week!

    This sounds absolutely delish, Robin! Sadly, I’m the only one in the house that’s a “kale lover” as my crew won’t touch it. That leaves the kale chips & kale salads all for moi’!
