So was this Monday the day your kids returned to school?  Emotionally charged & draining all at the same time? Not ready for the weekend to conclude? Hard workout?  Whatever it is… this smoothie has your back.  I was up before my 4:30 alarm went off.  Reminiscing about my oldest daughter… you see she starts her senior year today.  I think the only time I was this emotional at the start of school has been when she started kindergarten, which I swear was just yesterday.  But I digress… this beverage is going out to all you rockstar parents, grandparents or caregivers that love your coffee (I wish this was me).  BUT this coffee packs a punch of healthy protein & who doesn’t need that?! I made this for my dad, who is a big gym buff & coffee drinker.  Perfect cold beverage to restore his fatigued muscles & cool him down on this very hot, summery day.  I hope you love this as much as he does!

Ingredients:

1 cup of ice coffee brew (I used Califia)

1 banana, frozen or not
1 scoop of your favorite protein powder (mocha, vanilla or chocolate works best) I used Vega Sport
Dash of cinnamon
1 tablespoon of dark cacao powder (I used Valrhona)
1-2 cups of ice (if using a frozen banana use 1 cup)
1 Medjool date (pitted)

Optional:  Shave dark chocolate to garnish.

Method:

Add all of your ingredients to a Vitamix or high powered blender and blend on the smoothie setting.  Pour into two large glasses & enjoy!  You can store leftovers in a lidded jar/container for later (just shake before consuming).

My update will be short & sweet as I’m heading out of town again for a few days.  I have several dishes I need to prepare beforehand.  My workouts look very similar everyday with the occasional day I run.  But here’s my recap:

Sunday: 23 trail miles on our bikes
Monday: 2.5 miles on the treadmill, walked 10 minutes afterwards, 65 elliptical.  Tonight I’m going back with my oldest to do weights.

  1. I have a senior as well. I have got to buy a blender and a food processor. I have so many of your recipes saved but can not make them due to not owning either one.

    1. Jenn, A good blender is definitely a good investment. But many recipes can be made with a food processor too. The senior thing is still so upsetting/exciting. I don’t know where the time has gone. Hugs to you!
