Easy Blender Pumpkin Pancakes. Vegan. Gluten free.

Ingredients
  • 1.5 cups oatmeal
  • 2 tsp baking powder
  • ¼ cup of ground flax meal
  • 2 tsp ground cinnamon
  • 1 tsp of pumpkin spice
  • 1 large ripe banana
  • ⅓ cup of pumpkin puree
  • 1 tbsp maple syrup
  • 1 c + 1 tbl unsweetened nut based milk (unsweetened)
  • 1 tsp vanilla extract
  • ⅛ tsp sea salt
  • Coconut oil for pan (cooking)
Instructions
  1. Preheat your pan or griddle and add some coconut oil for frying.
  2. Into a high powered blender, add all of your ingredients from oats through sea salt.
  3. Blend until creamy and smooth.
  4. Ladle batter onto your hot griddle.
  5. Cook each side for about 2 minutes.
  6. Flip initially when bubbles appear through the pancakes.
  7. Serve immediately.
  8. Leftovers can be stored in an airtight container in your fridge for up to 5 days.
