I’m on a mini kick lately.  My family can’t seem to get enough of the cute, bite-sized food and I love that everyone gets their own.  The size and amount of filling can be adjusted to what you have on hand. Apple pie epitomizes fall and that my dear, is perfection in my eyes.

You can make this recipe super easy by using store-bought pie crust and candy caramels or jarred caramel.

Oatmeal honey apple muffins.

Oh the apple recipes that are coming out of my kitchen, paired up with the aroma… it is heavenly!  I love, love, love fall!  This muffin is super moist, thanks to the apples, packed with healthy goodness and just sweet enough to keep the kids coming back for more.  Perfect for a breakfast on the go, snack or paired up with a cup of tea, blanket and a good book. You get the picture.  Would also be fun done in mini muffin pans too.  Now onto the recipe as I have about 20 lbs of apples left that I need to get back to.

Cinnamon and Spice Apple Chips.

After a wonderful fall weekend, we finally got to the apple orchard and managed to pick 40 lbs of various apples.  Sunday was then spent cooking, baking and drying apples.  This week I’m going to be posting all apple recipes, hope you love apples as much as I do!  Today I’m starting with a super easy, healthy, vegan apple chip.  Kids love them!  Adults can’t stop eating them.  Perfect for after-school snacking, treats to pack in lunches or a healthy afternoon snack for you.  This is a totally fix it and forget it recipe.  Fall perfection!

Apple picking and apple recipe round-up.

Bring on fall!  The weather finally warranted wearing a sweater or jacket.  I absolutely adore this season and it is by far, my favorite.  Pumpkins, cool breezes, leaves changing to vibrant colors and apples!  Lots of apples.  Finally after several busy weekends, we were able to carve out a bit of time to hit up my favorite orchard and pick some apples, in fact 40 lbs!  In the coming days I will be sharing all of my favorite recipes for everything apple. Healthy apple cake.

It’s fall and apple season means more than just apple pie and apple sauce making.  Today, my schedule is jammed packed with appointments and a board meeting this evening.  I’m rushing around but had a chance to pop over to my favorite farm stand to pick up some fresh veggies and fruit.  I stumbled upon a creamed cinnamon honey that I just knew I had to buy.  Finding myself home with one hour to spare, I whipped up this apple cake and used my new little gem in the recipe.  While the cake is baking, I’m typing away so that I can share this recipe with you all.  This recipe uses no oils and little sugar, it merely celebrates the star of the cake – the sweet apple.  I hope you enjoy it.

Sweet Potato, Pear and Sage Soup.

As many of you know I was unfortunately down and out last week.  I had surgery on my finger the week prior and contracted a staph infection that landed me back in the hospital this past week hooked up to IV’s.  I’m so thankful to be home surrounded by family and good friends.  Boy the things we take for granted!  Despite my finger being bandaged and unable to really get in the kitchen and cook up a storm – I have to rely on my wonderful husband to help me, which he gladly obliged!  After my run on Sunday we whipped this up (had just picked up some fresh sweet potatoes and pears) and thought it would be the perfect dish on our first chill-in-the-air fall feeling Sunday.  It turned out beautifully and even my pickiest loved it.  Winner!

Pineapple Spinach Yogurt Protein Smoothie.

Sneaking vegetables into your kids has never been so easy!  I say this over and over again but your kids will not detect the spinach as the other flavors over-power it and make it virtually undetectable.  Plus, if you are trying to add more leafy greens to your diet, this is yet another fun way to do it.

Bill’s Watermelon Lime Martini.

We LOVE watermelon in our house.  And I realize, as school returns this week that my love affair with the fruit is wrapping up *sigh* as summer comes to an end.  Today, while grocery shopping, I picked up probably my 20th of the season and it was beautifully ripe and perfect.  My husband got to working at his new bar and whipped up this delightfully refreshing cocktail in honor of the watermelon.  Perfect to serve at a garden party, bar-b-que or for us, a s’mores night with friends around the fire.  Also perfect for a Labor Day party.  *Always drink responsibly.

Smoked Honey Dijon Mustard Glaze.

My little farm stand, tucked away on this windy road, surrounded by Amish farms has this wonderful little gem I found probably two or so years ago and I keep going back for more… it’s smoked honey.  I’ve gotten a slew of questions about how one smokes honey every time I post a picture.  I’m unsure of the exact measures that one takes to yield such an incredible product but I’m sure glad they do!  It’s remarkably flexible… I can top grilled fruit with it or use it in glazes, such as this one.  Tonight I’m grilling up a pork tenderloin for my family and this glaze will finish it off nicely.  You can easily use it over fish or chicken as well.

Balsamic grilled chicken and plums.

Like everyone on the planet who eats/prepares chicken, the search for a new, fun recipe is always a mission.  My husband was coming home from being away all week on business, I had chicken defrosting and originally thought it would be fun as shish kabobs but I didn’t have time to soak my sticks so I opted to grill (indoors due to a bit of rain) on my grill pan. This dinner came together perfectly and in one pan, which hey, is a big score in any kitchen!  I topped the final product over leftover quinoa I had in the fridge but it would be great over some brown rice too.
